Founded in1936 by Father Xavier Bonnot with the goal of producing high quality Jura wines according to the traditions of this unique wine region. It is in 1952 that his son, André Bonnot, takes over the family estate. André, with his background in winemaking and entrepreneur spirit, continues to develop the estate into its current form of combining the long Jura tradition and innovation in order to craft a whole range of Jura wines.
In recent years, his son and associate, Richard, joined the family’s enterprise and insures the family’s philosophy lives on.
As a negociant house, André Bonnot buys most of his grapes, but also works his own vineyards. All the vineyards are worked using traditional viticulture methods with minimal intervention. The purchased grapes are sourced from the same growers, year after year to ensure consistent fruit quality.
In the cellar, the family follows traditional Jura winemaking technics; The grapes are sorted upon entering the cellar; each plot is vinified separately based on the type of wine: dry, “sous-voile” (= ”under a veil” of Flor), sparkling, or sweet wines. The fermentation is made mostly in temperature-controlled stainless-steel vats; aging is made in stainless steel or oak barrels, using traditional 228L barrels or demi-muids of 500L, based on the different cuvées.
