The story of Domaine Pacaud begins in 1954, when Marie-Geneviève and André settled in the small southern Burgundy village of Chasselas, just a stone’s throw from the Roche de Solutré, and began farming vines and raising livestock. In the late 1970s, their son Guy took over the estate, expanding the vineyards and working the soils with great care—at a time when most wines were still sold in bulk.
Growing up here, every season left its mark on Julien and Sébastien: winter pruning, the magic of spring budbreak, summer days in the woods that border the vines, harvests filled with stories, and autumn evenings in the cellar alongside their father. In 2011, Julien began developing the estate with a vision shaped by his studies in bioengineering and environmental science. His passion for agronomy, biology, and microbiology brought a precise, terroir-driven approach to both vineyard and cellar. Sébastien joined him in 2021, bringing nearly a decade of experience in wine sales and marketing. Together, they now farm 13 hectares between the Mâconnais and Beaujolais, producing: Pouilly-Fuissé, Pouilly-Loché, Saint-Véran, Bourgogne Blanc, Beaujolais Blanc and Saint-Amour.
For the Pacaud brothers, everything begins with living soils. Each plot is farmed with care—whether horse ploughing, planting cover crops, or preserving hedgerows—to protect biodiversity and maintain balance. Grapes are harvested by hand and vinified with minimal intervention: direct pressing for whites, semi-carbonic fermentation for reds, indigenous yeasts, no added sulphur, and maturation in vats or oak barrels at their own pace. Since 2019, the estate has been in conversion to organic farming, and from the 2022 vintage, all wines proudly carry the label “Wine made from organically grown grapes.”

Beaujolais Blanc 'Le Clos de Rochenoire'
2023
100% Chardonnay. 10-year-old vines planted at 350 m altitude in Chasselas, in an enclosed parcel bordered by forest. East-facing slopes at the foot of the Roche Noire hill. Soils are predominantly marl, mixed with ancient Lower Triassic sandstone.
Hand-picked grapes, whole bunches, gentle pressing followed by fermentation with indigenous yeasts in temperature-controlled stainless-steel tanks. Gravity settling. Aged for 10 months on fine lees in concrete vats. Bottled unfined and unfiltered. No added sulphur.

Bourgogne Blanc 'Monsieur Jacques'
2023
100% Chardonnay planted in the commune of Leynes & Saint-Amour on ancient soils derived from Lower Triassic sandstone, with deep marl and alluvial scree. Depending on the plot, south, south-west and north facing. Hand-picked grapes, whole bunches, gentle pressing followed by fermentation with indigenous yeasts in temperature-controlled stainless-steel tanks. Gravity settling. Aged for 9 months on fine lees in a mix of stainless-steel & concrete vats. Bottled unfined and unfiltered. No added sulphur.

Saint-Véran 'Aux Faux'
2023
100% Chardonnay. 70-year-old vines planted on Clay-limestone soils with shallow hard limestone and an high ironed ochre-colored ferruginous soil. Hand-picked grapes, whole bunches, gentle pressing followed by fermentation with indigenous yeasts in temperature-controlled stainless-steel tanks. Gravity settling. 60% of the wine is aged for 10 months on fine lees in 500-liter used oak barrels, the rest is left on lees in stainless steel vats. Light filtration using white earth. No added sulphur.

Saint-Véran 'À La Côte'
2022
100% Chardonnay. 30-year-old vines planted in the village of Chasselas, between 400 and 500 m altitude, facing due south, on shallow, hard limestone very rich in iron oxides (very red, ochre-colored earth). Hand-picked grapes, whole bunches, gentle pressing followed by fermentation with indigenous yeasts in temperature-controlled stainless-steel tanks. Gravity settling. Aged for 12 months on fine lees in 500-liter used oak barrels (15% new), Light filtration using white earth. No added sulphur.
