The Estate consists of 15 ha spread over small plots in the province of Zamora. Ramón Ramos is the third-generation winemaker in the family. He works the vineyard with an obsessive attention to detail: ungrafted centennial vines from the native variety Tinta de Toro grown on rocky, sandy, very poor soil, with boulders, (Phylloxera can’t live on barren soils); dry farming, vines are planted of 12 feet apart, to ensure roots reach the bedrock. As a result, yields are very low, an average of only 2-3 lbs per plant. The grapes, picked by hand at dawn in small 40 lbs cases, spontaneous fermentation in small concrete tanks, plot by plot, using only native yeasts. The wines are bottled without fining or filtration.

Verdejo

2022

100% Verdejo from 20yo vines planted on poor sandy, stony soil. Harvested at nighttime by hand, pressed as soon as the grapes arrive to the cellar. Cold fermentation and settlement in stainless still followed by minimal finning before bottling.

Roble, 6 Meses en Barrica

2017/20

100% Tinta de Toro. Hand-harvested estate grown fruit from vines over 60 years old. Native yeasts, spontaneous fermentation. Aged in French barrels for 6 months and in bottle for 12 months. Not fined, and not filtered.

Crianza

2016

100% Tinta de Toro. Hand-harvested, estate-grown fruit from vines over 60 years old. Native yeasts, spontaneous fermentation. Aged in French barrels for 12 months and in bottle for 12 months. Not fined, and not filtered.
