Located south of the historic town of Toledo, at the foot of the Montes de Toledo, friends Sonia López and Javier Castro join forces to produce the Ziries wines from local Garnachas. They organically tend plots of old vines, planted on sandy and granitic loam soils, entrusted to them by older locals, who, too old to maintain the vines themselves, and too passionate and stubborn to rip up the vines, as most have in this area.
Through elaboration from vinifications by area and plot, their goal is to make wines with outmost respect for the variety and the land it comes from, they seek wines that are fresh, fruity and deep. Sonia (the winemaker), never uses new oak and maturation in done in 300-500L. used barrels. Total production of this small winery is around 10,000 bottles and its flagship is simply called Ziries.
